I spoke to the hotel’s director and co-owner Fraser Short on everything the hotel has to offer.

FM-Firstly tell us about Watson’s Bay Boutique Hotel?

We believe that a visit to Sydney just wouldn’t be complete without experiencing the beauty of Watsons Bay and, of course, the iconic Watsons Bay Boutique Hotel. After a recent multi-million dollar refurb, Watsons Bay Boutique Hotel has fast become home to those in pursuit of sun, sea, good company and great food, all experienced in a relaxed beachside venue with unobstructed, panoramic Sydney harbour views.

FM-What makes the hotel so unique?

Our landmark venue is about escaping to an exclusive seaside oasis where you can enjoy the relaxed Yacht Club ambiance with a million dollar view. Whether you seek a romantic weekend away or extravagant party, an intimate conference space or lavish wedding, at Watson’s Bay Boutique Hotel we strive to take your experience to the next level and make it unforgettable.

FM-Can you tell us about the interior design of the Hotel?

Since it’s refurbishment, the iconic art deco landmark has relaunched as a seaside oasis with a cool Yacht Club ambiance. Every effort has been made to highlight our unique location with floor to ceiling glass windows in our dining and event spaces, and accommodation rooms.

Our Beach Club is a multilevel casual drinking and dining space decked out with chic Basil Bangs umbrellas, with an exclusive Top Deck area which facilitates panoramic harbour views. The Sunset Room is a purpose built and architecturally designed event and wedding space, embellished with a Hamptons aesthetic. It boasts crisp white walls, floor to ceiling windows with spectacular harbour views, timber flooring, a white marble bar and nautical finishings.

Our boutique hotel rooms also boast floor to ceiling windows so our guests can enjoy the spectacular sunset, luxurious marble ensuite bathrooms, plush king sized beds and breath-taking views.

FM-What are three things that is a must to try or do for a guest staying?

Any loyal local of the bay would recommend our famous Fish and Chips, so that’s number one on the list. Next, watching the sunset over the spectacular harbour from our Top Deck, cocktail in hand, is a must! And if you’re craving something active, hire a paddle board and work up your appetite for lunch in the Beach Club.

FM-​What is the most popular dish on the menu?

Inspiration for our menus have come from our proximity to the sea, as well as our Chef’s dedication and passion for quality seafood and fresh seasonal produce. Most popular dish would be our famous beer battered Fish and Chips, but if you’re looking for something seriously indulgent – go the seafood platter!

 FM-What’s coming up on the Hotel’s calendar?

We’re busy planning the Beach Club Summer Launch Party in September, and are also taking part in The Sydney Morning Herald Good Food Month in October. Keep an eye out for our Cider Festival and Food & Produce Market. A venue favourite is Melbourne Cup coming up in November, and of course the silly season is always the best kind of mayhem at Watsons Bay Boutique Hotel.
