When I first came across Nectar and Stone on Instagram I was sure I had never seen such beautiful chocolate in my life. Why eat brown chocolate when it can be the most stunning shades of peach and pinks with flecks of gold. The perfect pyramids of sweet chocolate art made me fall in love. Here at Freckle Magazine we love anyone who pushes the creative limits and that’s exactly what owner and baker Caroline Khoo does. I loved chatting to Caroline about Paris, her most loved things and the future of Nectar and Stone.

FM-Tell us a little about you first-

My name is Caz and I am a dessert designer and mother of two beautiful young boys. I live my life chasing dreams, sunsets and capturing peoples minds with sweet dessert creations that push boundaries. Everything you see has a story behind it.

FM- Have you always been into baking and sweet things?

Yes, I have always had an interest in baking and making sweet things. It was only after having my two boys that I realised I wanted to do it every day – all day.

FM-What is the biggest mistake most home bakers make?

I think the biggest mistake home bakers make is not understanding the science of the how ingredients work together. The most important lesson I could impart on any home baker is to start with the basics – start by learning the different functions of eggs.

FM-I get really annoyed when..?

The day has come to an end and I have to sleep. I wish there were more hours in the day.

FM-With a successful business how to you rewind at the end of a stressful day?

Oh gosh I don’t think I have time to rewind at the end of the day – things on my end are so busy and full on that it is just go go go at the moment. For me, nectar and stone is all about passion – I live and breathe this with my family. I don’t see this as a 9-5 job – I am always excited about bringing new ideas and concepts to my clients each day, I don’t feel stressed – just happy that I have another day doing what I love.

FM-Three things you couldn’t live without?

1. My family (they are my rock and keep me grounded)

2. My whisks – (they can travel anywhere)

3. My watch – (I never remember the date but my watch at least helps me with the time)!!

FM-Your dream holiday would be?

To live in Paris for as long as possible.

FM-Happiness to you is…?

Waking up everyday with kisses from my children and husband and ending it with them in my arms. Through their love, faith and belief in me – nectar and stone breathes.

FM-Where do you see yourself in 5 years time?

I hope in 5 years time I have some beautiful cakeries around Australia and products being distributed internationally for all my amazing followers to sample.
