Boss Babe // Mactisserie

There are macarons and then there are Mactisserie macarons. A while back I met the lovely Julia and tried one of her Snickers bar macarons. Yes I said Snickers bar. To be honest I was never a huge fan of the macaron (nothing is worse then a bad macaron) but one bite of that heavenly Snickers bar macaron and I was sold! Mactisserie only use the finest ingredients, “Using only superior ingredients such as Equagold vanilla & chocolate products and free-range eggs, all Mactisserie Macarons are full of natural flavour.” However what sets Mactisserie Macarons aside are the flavors; Pinky bar, Coffee, Vanilla Coconut,  and Boysenberry swirl to name a few. I talked to Julia about baking, travel  and how to make the perfect macaron.

FM-Tell us a little about you first-

Hi, my name is Julia. I hail from Auckland and am a 80’s baby. I have a Bachelor of Design, majoring in Fashion. After a few years in the fashion industry my passion for food grew and grew. So I decided to move on from that world and try my hand at what I always felt was my true calling, baking.

FM- Tell us about Mactisserie/How did it all begin?

Mactisserie began in 2013 specialising in delicious hand crafted quality Macarons. I chose Macarons as a starting point as there were fewer suppliers of these beautiful treats and they are also naturally gluten free, which I wanted to be a fundamental part of my business.

FM-Besides Macarons what do you love to bake?

I love all baking so I am currently developing new gluten free cakes, cookies and pastries. Even though it may be a trend as of late for things to be gluten free, I love the challenge of creating something that is gluten free, but looks, tastes and has the texture of a gluten based product. Being gluten free myself as well as a perfectionist when it comes to baking, I hope to offer food that even a gluten tolerant person would love!

FM- What is the main tip for the perfect macaron?

Oh there are so many! For those who have made Macarons will know it is easy to go wrong! At every stage there are tips to follow but the most important one for me is the mixing of the batter before piping. There is a fine line between under and over mixing, you want to have a batter that is a thick shiny lava consistency which falls off the spatula in thick ribbons.

FM-Your favorite meal is..?

After all the taste testing of sweet treats, I am a sucker for Nachos mmmm

FM-I get really annoyed when..?

I over-mix the Macaron batter. Argh!

FM-Your dream holiday would be?

Best patisserie and theme park tour of the world, followed by a tropical retreat like Rarotonga to recover!

When those I love are happy and healthy, feeling satisfied in life, relationships and career.

FM-Where do you see yourself in 5 years time?

I am not sure really to be honest, I like taking life as it comes but with the odd goal in mind. The main thing, I hope to never use my C.V again! I hope to establish Mactisserie as a high quality brand, selling an array of products both wholesale and direct. Personally, I hope to travel more and maybe fulfil that dream holiday of mine!
